About

Since opening as the Mercantile Hotel in 1853, the establishment on the corner of King and Flinders street Melbourne has had a colourful and entertaining history. The first publican was Stephen Donovan who held the licence for just nine months before selling the goodwill to W. McDonough for the sum of £10,000 and £1,500 per annum rent.

The Hotel had a further two name changes in 1867 becoming the Duke of Edinburgh and in 1868 the London and Barnarvon Hotel. The Hotel had a long list of publicans including many women.

In 1915 the hotel was again renamed, this time to its current title, The Waterside Hotel.

Bledisloe Cup Wallabies Post Match Function

Even though the Australian Rugby team got thumped by the All Blacks, a good time was had at an exclusive event held post game for the team, its officials, friends and family at The Galley Room. Former Australian captain and star Melbourne Rebels signing Stirling Mortlock held court before the players arrived, while Sydney socialite Pip Edwards made everyone comfortable ordering jugs of yum white sangria.

Reserve Luxury Brands Cocktail Competition

5 of Melbourne's best bartenders presented their luxury dark spirits cocktail experience at The Galley Room on the 10th of June. These guys showcased some crazy concepts for spirit and cocktail appreciation. The competitors were Adi (Black Pearl), Leo (Berlin Bar), Andy (Cookie), Merlin (1806) and Evan (Black Pearl). It was a closed event but check out the photos on the Galley Rooms facebook page, theres some wacky stuff!

Joseph Cartron Liqueurs Master Class

50 of Melbournes finest bar professionals attended a unique tasting of one the worlds most revered French liqueur brands. Benoit de Truchis, the International Director for Joseph Cartron gave the group an insight into how they are made, the history of French liqueurs and and broke down and defined the different categories of liqueurs and brandies.

COCKTAILS

The Galley Room prides itself on presenting great cocktails and mixed drinks. While here is a small list of some of our creations we also encourage you to test us. Ask for a classic or think about what flavours you feel like. We stock some amazing products and we use only fresh, seasonal produce. We make most of our own syrups, bitters, etc and work with only the best ice. Our bartenders and floor staff are knowledgeable, experienced and love a chat. Get involved!

Social Butterfly
If carnivale was a cocktail this would be it. Brazillian spirit and fresh tropical fruit are given a tickle by subtle chocolate and spice flavours.
Sagatiba Pura Cachaca, fresh strawberry,fresh passionfruit, white crème de cacao,aromatic bitters and lemon juice.

Tropical Bang!
This is an adult frosty fruit with a bang! Orange blossom, grapefruit and pomegranate form the tropical taste while a green apple sherbet provides the tingle. Bang! Belvedere orange vodka, pomegranate syrup, grapefruit bitters, lemon with green apple sherbet. 

Acapulco Whitewash
You'll be doing barrel rolls in this wave of flavour. Notes of honey and sweet herbs combine with highland tequila and pineapple foam.
Don Julio Blanco tequila, Yellow Chartreuse,agave syrup, lemon juice, bitters with a pineapple foam.

Rubber Ducky
A squeaky clean palate refresher with bright dried fruit flavours flapping south for the winter. Elderflower and apple mix with white chocolate and sparkling rose. St Germain elderflower liqueur, cloudy apple juice, white cremede cacao, chocolate bitters, lemon and sparkling rose.

Chk Chk Boom! 
Peach, peach and more peach is matched with woody, honey-like malt scotch. The smoothness is contrasted by a smokey mist over the top. Fully sick. 
Dalwhinnie single malt, peach liqueur, peach bitters,lemon juice with a lagavulin or Ardbeg mist.

King Street Smash
Alot of flavour packed into a short glass and it packs a punch. Fruit driven tequila is matched to breakfast marmalade, rhubarb and then freshened with mint. 'Smashes' have been around since the 1850's.
Don Julio Reposado, orange marmalade, pineapple juice,rhubarb bitters, mint and lemon juice.

Message in a bottle
Sending out an SOS. Calling all cars. There's a pirate ship off the coast of Phuket full of English backpackers. Bring them ashore. Ginger, grapefruit, gin and rum are rationed into a small bottle. Drink to ward off scurvy and lady boys.
Tanqueray gin, Appleton VX rum, Canton ginger liqueur,peach liqueur shaken with grapefruit bitters.

Whoopsy Daisy
Floral chamomile is added to rich flavours of white chocolate and toffee. Served petite and dainty. A 'daisy' is a classic style of cocktail dating from the 1800's. Chamomile-infused Wild Turkey bourbon, white creme de cacao, cointreau and lemon.

Tucked discreetly in The Waterside Hotel building at Level One, this quintessentially stylish cocktail bar has been designed to impress. An exclusive atmosphere with intimate corners for private chats and relaxed lounging awaits.

The Galley Room features one of Melbourne's most creative cocktail lists, purpose-designed by Jason Williams, former ALIA Bartender of the year. Chef Darren McKinlay has designed a canape menu full of delicacies from the Galley Kitchen using fresh quality produce.
